Well Worth the Investment

I have had my eye on the Legacy Edisto knives for years but just could not bring myself to purchase one. I know they are works of art, one of a kind, and heirloom quality but the practical side of my brain just would not allow me to pull the trigger. I took advantage of a BOGO sale recently and chose the dark gray colored handle on a V2 and a Paracord knife as my BOGO. People, I am telling you, this V2 is the ticket for a utilitarian oyster knife. It is heavier than I expected, but the balance is perfect. It sits in my hand well. The fit and finish is immaculate. The point on this knife is somewhat sharper than most hardware store oyster knives and there is more of an edge to the blade. It digs right into the elbow and pops open even the most stubborn oyster with ease and cuts it free of the shell with little effort. No more sore thumbs nor aching fingers after shucking several dozen around the firepit. OK, so it doesn't have an exotic wood on the handle nor a Damascus or hammered blade, but does that really matter? I mean, the object here is to get the oyster out of the shell, right? To me, my V2 is every bit as much of an heirloom as the Legacy line. I'll hand this one down to my grandkids and they will love to get Granddad's oyster knife because it's the memories being made that are truly priceless.
